Abstract
This study was designed to determine some of the effects of carcass weight, grade, sex, and certain carcass measurements upon yield of retail cuts.
Specifically, the objectives were:
1. To study further the effect of carcass measurements upon the yield of retail cuts in regard to grade and weight.
2. To determine the effects of a range of carcass weights of the various grades upon yield of retail cuts.
3. To determine the effects of sex upon percentage yield of the various retail cuts.
4. To compare yields among grades and weight groups within grades as a basis for economical selection for edible portion.
