Abstract

Foods are kept in refrigerators because in them are maintained atmospheric conditions designed to retard spoilage. Foods spoil due to the presence of tiny living growths known as micro-organisms. Three types of these micro-organisms -- bacteria, yeast, and molds -- are the most important and objectionable of all causes of food spoilage. The growth of bacteria, yeast, and molds, like that of all other plants, is influenced by temperature, moisture, and light. This paper, as indicated by the subject, is to deal with the moisture in ice and electric refrigerators.
