Abstract

The effect of cold on the preservation of food products has been known to man almost since the beginning of civilization. This method of preserving foods has recently been developed extensively, especially in Canada has the construction of many plants been completed.


In the United States, I should think the subject of cold storage would play a larger art in the preserving of foods, since there is a greater range of temperature in the United States.

The establishment of cold storage plants in the central parts of the farming districts will enable the farmers to market their products in car load lots. This will be a great saving to them, and will also allow the people of the large cities to be supplied with fresh vegetables, eggs, etc., almost the year round.
